Copperwing Distillery is the story of three friends who come from the fields of engineering, medicine, and law. In 2014, Chris and Brian, who were former neighbors and fast friends, got to talking one night over cocktails. They speculated about what it would take to open their own micro-distillery and realized it was something within their reach. A short while later, Chris recruited Kyle, a former colleague and home brew hobbyist, to join the endeavor and Copperwing Distillery was born. Research and investments ensued. The guys found a warehouse space in St. Louis Park and set to work pursuing licenses, designing and building stills, and developing recipes for spirits. They did this in the hours after tucking their children into bed because all three had day jobs and family responsibilities.

Coal was burned in the first ovens used to bake pizza in the United States. Today these restaurants, found mostly in Brooklyn, Manhattan, and New Haven, define the “American” pizza experience by still using coal to make some of the best pizza in the world. As the first coal-burning pizza restaurant in Minnesota, Black Sheep Pizza seeks to honor the craft of these pioneers by using clean burning Anthracite coal and the best ingredients possible to create the great American pizza experience for you.
After being named one of the “Best Pizza Places in the U.S.” by Time magazine, the Travail Collective chef-owners Mike Brown, James Winberg and Bob Gerken have worked to enhance the Pig Ate My Pizza experience with inspired food and beverage pairings, including craft cocktails developed by bar director Nathaniel Smith and a micro-brewery developed with longtime Travail Chef de Cuisine Andy Goettsch, chef/brewer Nate Moser, and chef Josh Disher.
